A group of Dietician experts discovered in their study of food habits and cooking practices across the globe, that the South Indian Brahmin meal is by far the best to sustain and support good health.

Here below, you find the Tamil Brahmin way of food preparation.

You are what you eat. Isn't it? At least, that seems the way Tamil Brahmins view cooking.

Tamil Brahmin cuisine is based on the concept that food shapes the personality, mood and mind and a healthy vegetarian diet fosters serene qualities. In Brahmin households, food is cooked with a great deal of attention to cleanliness; to the balancing of nutrition, flavor, texture and variety.

The spices used play an important role in our everyday life.

Fenugreek as a digestive aid, cumin has multiple usages, dried legumes and beans are great protein sources, pepper is the best home remedy for colds and coughs, turmeric is the wonder healer of wounds.

Curry leaves and coriander leaves aid cleansing the intestines and kidneys.

Every ingredient used in the Tamil-Brahmin cuisine has a purpose, that goes beyond its taste and texture.

Typically, idli, dosa, Rice upma are the common breakfast dishes. Brahmins do not prefer oily dishes in the morning for breakfast because, consumption of oil blunts the brain temporarily and don't we all need sharp minds in the morning hours at our work place?

Tomato chutney is prepared as tomatoes contain lycopene, which is one of the most powerful antioxidants. A daily or even weekly dose of a spoonful of tomato chutney is good in preventing cancer.

Rice Upma is a ready breakfast in just over 7 minutes. It has all the goodness of rice and won't let you get hungry soon.

Some Brahmins skip breakfast. They straight go to lunch at the about 10 AM.

You stay fresh and agile, all through the day.

Lunch is not just a romance with food, lunch is an offering to the rejuvenation of the body, and the meal is cooked with the combination of spices in such a way that the soul stays serene.

Plantain stem curry, the white centre piece of the banana plant is chopped and added with assorted spices. It makes a delicious side dish. It is high in fiber content and aids in digestion. Babies are fed with the juice of plantain stem to be cured of colic.

Yet another favorite amongst all is lady's findger fry. It is an absolute yummy dish. Kids are often told that the lady's finger makes them brainy, smart and intelligent.

Greens are a great favourite in this community. Almost everday there would be some dish prepared with fresh green leaves. Some common dishes prepared with greens are methi leaves, dhaal and plain green leaves dhaal that is present every alternate day.

Yet another awesome healthy dish is buttermilk or spiced yoghurt salty kheer. This tastes great with raw banana curry.

Jaggery water spiced with dry ginger, known as Paanagam, and Kosumalli have their health benefits. Kosumalli is the plain old raitha with the goodness and proteins of moong dal.

There are various variations to Kosumalli like Carrot Kosumalli, Cucumber Kosumalli, Radish Kosumalli, and so on. One thing in this community's dishes is amazing that almost any dish can be substituted with any vegetable, fruit or grain and still made equally tasty with the assorted spice and flavor.

Brahmins have to finally eat curd rice with a pickle. They believe that curd rice is absolutely essential to make a meal complete because of its cooling properties. The stomach needs to be cooled after such a very heavy and spicy meal.

A ripe banana is taken at the end to top it all.

Also say rice means raw rice and of late Brahmins started eating boiled rice or par boiled rice because it is told by doctors and surely raw rice is best because boiled rice is already boiled and once boiled it will not carry forward to next day by Brahmins and hence only preferred is raw rice. Why people copy others when brahmin meal is certified healthy by others as you said in the post

Sambar and Rasam – Rasamana Vivadam (Juicy Explanation!)

An explanation by Kanchi Maha Periyaval.

”What is the difference between kuzhambu and rasam?

Both contain dal,tamarind,salt,sambar podi, and asofoetida. Someone from those assembled said we consume sambar first then rasam that’s the difference. The Mahan laughed loudly.

He said”kuzhambu has vegetables but rasam does not.”Based on this discussion proceeded.

Acharya’s explanation lf TAAN i.e. pride/ego occupies our mind we get confussed (kuzhambi pogirom) ie like sambar. But if that TAAN is not there our mind is clear like rasam.

TAAN is the word used in many households for vegetables.

We should not forget this and so we consume each day both kuzhambu and rasam.

You go for a feast you are served with Kuzhambu, Rasam, Payasam, Moru (Buttermilk) in this order. why?

This food culture is not found anywhere else. As Soon as man is born TAAN i.e. ego fills in first. He faces a number of problems that totally confuses him (Kuzhambi Pogirathu.) That is what shows first.

When his mind settles it becomes clear like rasam. This is followed by sweets i.e. Payasam, Sweets, etc. That gives him happiness.

So many similarities between life & food.

Moru (Buttermilk) has a separate quality. Our mind becomes one with the lord just like we get curd , butter, ghee and buttermilk from milk in that order.

Buttermilk is the last stage from which you cannot get anything more. The same way once you attain the lord then there is nothing more to achieve. Moru sadam (Buttermilk rice) also indicates that its the last item on the menu after which you just leave your leaf.

I am TB and follow TB cooking.
It is cultural.
If you say, world dieticians said then the source must be quoted.
Watsapp is not a legitimate source.
If you can not get the source then it might belong to the fiction section.
Maybe the Administrator can add a new section called Fictions and Myths.

Yes, when few brahmin priests eat even takeaway dishes from restaurants or eat there, while in those days they wont even drink water outside, what can we say about rice, whether raw or par boiled..In our house those days we made even idli batter from raw rice soaked in hot water .Here we need to take into account only the vegetarian diet in particular as also the selection of spices and condiments...as well as manu.
