Here is a quick, colorful, flavorful and delicious rice recipe. It hardly takes 10 minutes to prepare this dish.Once rice is kept ready,this dish can be prepared in a jiffy and is also a perfect lunch box recipe.

Ingredients needed

Basmati Rice - 1 cup
Capsicums chopped - 1 1/4 cup ( all 3 colours together)
Garam Masala Powder - 1 tsp
Onion - 1 chopped


Ingredients for Masala Powder

Urad dal - 2 tsp
Coriander seeds - 2 1/2 tsp
Jeera /cumin seeds - 1 tsp
Red chillies- 4-5

For the seasoning

Oil -1 tbsp
Mustard seeds - 1 tsp

Preparation

Wash and soak basmati rice for 20 minutes, drain the water and cook the rice in such a way that each grains are separate. Keep it aside.

Chop capsicums into small strips.

Heat a tsp of oil, fry urad dal, coriander seeds, cumin seeds and red chilli. Powder it and keep it aside.



Method (Just 3 steps)

1.Heat oil in a pan, add mustard seeds, when they splutter, add finely chopped onions and saute till it turns transparent .

2.Now add the chopped capsicums, prepared masala powder, garam masala powder and salt needed. Saute on high flames till the capsicums are slightly cooked. Do not overcook as the capsicums should be crispy and not soggy.

3.Mix cooked rice gently, garnish with coriander leaves and serve hot with raita or chips or any gravy.
