மங்களூர் பஜ்ஜி

கர்நாடகத்தில் மிகவும் பிரபலமான ஒரு ஸ்நாக்ஸ் தான் மங்களூர் பஜ்ஜி. இந்த ஸ்நாக்ஸ் ரெசிபியானது குழந்தைகள் முதல் பெரியவர் வரை அனைவரும் விரும்பி சாப்பிடும் வகையில் இருக்கும். இந்த ரெசிபியை செய்வது மிகவும் ஈஸி. இங்கு அந்த மங்களூர் பஜ்ஜி ரெசிபியின் செய்முறை கொடுக்கப்பட்டுள்ளது.

தேவையான பொருட்கள்: மைதா - 1 கப் தயிர் - 1/2 கப் இஞ்சி - 1 துண்டு (நறுக்கியது) பச்சை மிளகாய் - 2 (பொடியாக நறுக்கியது) கறிவேப்பிலை - சிறிது (பொடியாக நறுக்கியது) பேக்கிங் சோடா - 1 டீஸ்பூன் தேங்காய் - 1/4 கப் (பொடியாக நறுக்கியது) உப்பு - தேவையான அளவு எண்ணெய் - தேவையான அளவு (பொரிப்பதற்கு) செய்முறை: முதலில் ஒரு பௌலில் மைதா, தயிர் மற்றும் தேவையான அளவு தண்ணீர் மற்றும் உப்பு சேர்த்து ஓரளவு கெட்டியாக கலந்து, 3-4 மணிநேரம் ஊற வைத்துக் கொள்ள வேண்டும். பின்னர் அதில் இஞ்சி, பச்சை மிளகாய், கறிவேப்பலை, தேங்காய் மற்றும் பேக்கிங் சோடா ஆகியவற்றை சேர்த்து நன்கு கலந்து கொள்ள வேண்டும். பின்பு ஒரு வாணலியை அடுப்பில் வைத்து, அதில் பொரிப்பதற்கு தேவையான அளவு எண்ணெய் ஊற்றி காய்ந்ததும், பிசைந்து வைத்துள்ள மாவை உருண்டைகளாக பிடித்து, எண்ணெயில் போட்டு பொன்னிறமாக பொரித்து எடுக்க வேண்டும்.

இதேப் போன்று அனைத்து மாவையும் எண்ணெயில் போட்டு பொரித்து எடுத்து, பின் அதனை தேங்காய் சட்னியுடன் சாப்பிட்டால் மிகவும் அருமையாக இருக்கும்.

this is available in woodlands in chennai in afternoon . one of my favourites . only it is called mangalore bonda

Dear P s N Sir,

'Bajji' has to be long and flat; 'bOndA' has to be spherical in shape!

So, there is a lot of importance attached to a name. :thumb:
P.S: BTW, do you know how our forum was driven crazy by a gentleman who used a female name, recently? :juggle:

Does the photo look lke a bajji or a bonda . it looks ellipsoidal with a lot of fat in the middle.

As regards gentleman with a female name , only ladies and senior citizens were surprised in the forum . the younger lot had a lot of fun.trying to decipher his[her] posts .
