பூண்டு ரசம்


ஒரு முழு பூண்டைத் தோலுரிச்சு, தேவையான அளவு புளித்தண்ணியில வேகப் போடுங்க. பிறகு அதை நல்லா மசிச்சு விடுங்க. அப்புறம், காய்ஞ்ச மிளகாய் ஆறு, ஒரு டேபிள் ஸ்பூன் தனியா, ஒரு டீஸ்பூன் மிளகு, சின்னத் துண்டு பெருங்காயம்.. இது எல்லாத்தையும் நெய்யில வறுத்து, மிக்ஸியில கரகரப்பா பொடிச்சு, வெந்துக்கிட்டிருக்கற ரசத்துல போடுங்க. தேவையான உப்பும் போடணும்.


வெந்த துவரம்பருப்பை ஒரு கரண்டியளவு எடுத்து, அரை டம்ளர் தண்ணியில கரைச்சு, ரசத்துல ஊத்தி, நுரைச்சு வந்ததும் இறக்கிட வேண்டியதுதான். தேவைப்பட்டா, ஒரு தக்காளியை பொடியா நறுக்கிப் போடலாம். ஒரு டேபிள்ஸ்பூன் நெய்யில ஒரு டீஸ்பூன் கடுகு, சீரகம் தாளிச்சு, ரசத்துல கொட்டி, கைப்பிடியளவு கொத்துமல்லித்தழையை பொடியா நறுக்கி, ரசத்துல சேர்த்தா வாசனை எட்டூரைக் கூட்டும்.

poondu is not brahmin bhojan .in fact good brahmins do not take poondu.

one must take poondu rasam made by NBs . They know how to make it. far better than brahmins.

I have reasons to say this . i have a NB cook

The recipe in #1, as well as its variations, is a tried, tested formula and does not give "வாசனை எட்டூரைக் கூட்டும்" effect of poondu.

Otoh, poondu rasam from hotels are mind bogglingly tasty and aromatic (of poondu). Perhaps there is some other elusive secret to this.

Similarly, another speciality, which we have unsuccesfully tried, is to replicate the "hotel medhu vadai"... none of the internet recipes can come out with the same texture, fluffiness and taste

you are right....we never make poondu rasam at home....but we like HOTEL POONDU RASAM....exactly HOTEL MEDHU VADAI
