Roasted Corn Salad

Ingredients


  • 1 corn cob
  • 1/2 onion, chopped
  • 1/2 capsicum, chopped
  • 1/2 red pepper, chopped
  • 1/2 yellow pepper, chopped

  • Salt to taste
  • 1/4 tsp red chilli powder
  • 1 tsp olive oil
  • 2 tsp lemon juice

Method

  • Roast the corn cob on the flame till golden brown
  • Remove all the corn kernels from the con with a knife
  • In a bowl mix the corn kernels with onion, peppers, capsicum, salt
  • Combine red chilli powder, olive oil and lemon juice to make a dressing
  • Add this dressing to the corn kernels
  • Serve
