POTATO PULUSU...ANDHRA SPECIALITY

Boil and dice a cup of aloo and toast it in a pan with a tsp oil.

Remove on a plate and add a tbsp gingelly oil in the pan and add a tsp mustard and and ½ tsp methi..

then finely chopped onion 1, after it changes colour, add finely chopped tomatoes 2, turmeric, salt, chilli powder, allow it to cook and now add thick tamarind water..

As it starts boiling, add the potatoes..

Allow it to simmer.

When oil starts separating, add curry leaves and remove from fire.


This is a best combo with plain rice, curd rice, dosas, rotis..
