The general belief is `Drishti' is removed on Ashguard breaking. Lemon breaking again is offering a symbolic `sacrifice' instead of live sacrifice. Vetrilai is basically a digestive item. Even though we offer to God as Neivedyam, we consume it after food.

As per religious belief,Ash gourd is supposed to be a antidote for evil eye aspects of those who do not harbour good thoughts about us.Lemon has the propensity to attract all forces, good or bad.The original practice was the surchrage the same with mantras and then offer it as a bali for destroying the bad forces, but now it is more or less only symbolic

Breaking the Ash gourd filled with Kumkumam is symbolic of animal sacrifice. One can easily imagine why if one looks at the site where the gourd has been smashed and the juices stained with kumkumam spilt. So is breaking the coconut. Coconut , with its skin, eyes, shell (bone), flesh and fluid so eminently represents an animal that it has replaced animals for daily sacrifices. I am not very sure of lemon, how or why it came to represent or symbolize animal, I am certain it is an animal substitute. May be because of its easy availability, size etc.
