It is not about serving sequence, it is about in which place each item is to be should be served;

The serving order and the places are different for brahmins.

Only pAyasam and rice are served on the lower half (broader side). Even dhal is to be served just below the veggies and pickles on the

upper half of the leaf. pAyasam, thayir pachchadi, sweet pachchadi, curries, koottu / aviyal, thogaiyal, puLikkachchal, pickles, pinch of

salt occupy the upper half starting from broader to smaller end. The 'nuni elai' end portion is reserved for vadai, sweet/s, chips, vadAm

and chithrAnnam. Rice and ghee are served on the lower half of the broader side, after serving all these!
