It's a bold ambition for a man who set up a small cafe on a quiet street in Leeds.
But Adam Smith's Real Junk Food Project Cafe is different. All the food used in the cafe is "intercepted".
This doesn't mean they take food from bins or skips. Through relationships with local businesses they take in food past its expiry date but still edible, incorrectly labelled food, or food that would otherwise be thrown out.
The cafe is run by volunteers and meals are served on a "pay as you feel" basis. Customers can pay with money, or with their time or services.
The concept is now set to be expanded to other locations around the UK and the world.
