BUTTER MILK Beat the heat with these easy-to-make and delicious desi summer coolers.

Chaas is basically curd that’s blended with some water and spices in an earthen pot to make a frothy liquid for a cooling effect. Known as buttermilk, chaas is a popular Indian coolant that doubles up as a thirst quencher as well as aids digestion. Buttermilk is a cold and refreshing beverage on a hot Indian summer's day.

It cools the body, nourishes the soul and drives away the heat.

Ingredients



Chilled Yogurt – 1 cup

Green chili – 1, chopped very finely

Ginger juice – 1 teaspoon

Cilantro – few springs, chopped very finely

Curry leaves- chopped very finely

Black salt – ¾ teaspoon

Chaat masala – ¾ teaspoon

Salt – to taste

Water - 2 cups


How to Prepare



Take yogurt in a bowl. Add chopped green chili, cilantro, curry leaves, ginger juice, black salt, chaat masala and salt.

Whisk it well. You can use wire whisk. I have used hand blender because I want chilies, cilantro and curry leaves almost ground. So I don’t bite them while drinking.

Now add water and whisk it again to mix.

Pour into the glass and serve.

If yogurt is not chilled then chill the chaas in refrigerator then serve.

Chat masala in "Butter milk"? That would taste weird.

Alternatively one can temper some mustard seeds and mix it to give a nice taste.

Actually real buttermilk is not diluted yogurt..real buttermilk is what remains after butter has been extracted.
 
We add asafoetida, crushed curry/coriander leaves, dhaniya powder and chopped green chilly to butter milk...Finally add fried mustard as finishing..In case curd is used this can become a side dish for rice or chappathi
