Very Veggie Pasta Toss

Ingredients


  • 250 g Whole Wheat Angel-hair Pasta or Spaghetti
  • 350 g broccoli stalks, trimmed, peeled, julienned
  • 100 g Red Cabbage, julienned
  • 450 g bell peppers, sliced
  • 100 g Cherry Tomatoes, cut into halves

Method

  • Heat oil in large non-stick pan over medium heat. Add peppers, broccoli and carrots
  • Cook, stirring, until tender, about 8 minutes. Transfer to bowl
  • Cook tomatoes in pan, stirring, about 8 minutes. Add garlic and cook for a minute. Set aside
  • Prepare pasta as per package directions. Reserve 1/2 cup of the cooking liquid
  • Add drained pasta, vegetables, reserve cooking liquid and vinegar to pan
  • Cook over medium heat, stirring, about 5 minutes
  • Season to taste with salt and pepper
 
I find that by adding olives and a splash of olive oil, sphagetti becomes a great favourite of my unrelenting taste buds.

The combination of sphagetti, tomatoes and olive oil is a treat in itself.
