Ingredients
- 250 g Whole Wheat Angel-hair Pasta or Spaghetti
- 350 g broccoli stalks, trimmed, peeled, julienned
- 100 g Red Cabbage, julienned
- 450 g bell peppers, sliced
- 100 g Cherry Tomatoes, cut into halves
Method
- Heat oil in large non-stick pan over medium heat. Add peppers, broccoli and carrots
- Cook, stirring, until tender, about 8 minutes. Transfer to bowl
- Cook tomatoes in pan, stirring, about 8 minutes. Add garlic and cook for a minute. Set aside
- Prepare pasta as per package directions. Reserve 1/2 cup of the cooking liquid
- Add drained pasta, vegetables, reserve cooking liquid and vinegar to pan
- Cook over medium heat, stirring, about 5 minutes
- Season to taste with salt and pepper
