Thattai and murukku
Can we make thattai and murukku with the readymade rice flour and if, so, how. Even when we get it ground from machine outside, it does not become very crispy for me. So, can anyone help me.

My wife says Thattai can be prepared using ready made rice flour, but not Murukku. For Thattai we have to sift the Rice Floor through a muslin cloth or a fine sieve and fry the flour a little, before using. All other ingredients can be mixed as per the receipe and fried to get good crispy Thattai.

Thank You . For murukku, the flour has to bea liitle bit wet isn't it.That is why probabnlyu, it is not possible.

Thattai can be made from packed rice flour, maida + rice flour, and a few more basic composites. Murukku of raw rice or boiled rice (which is a speciality of Nanchilnad) can be made only by the traditional wet grinding. But today பச்சரிசி முறுக்கு is manufactured on large scale from packet rice flour, mixing a little maida and by using the mechanical devices for making murukku. The consistency can be arrived at by a little trial and error (once or twice you try and then you will get the correct consistency.).

we have made both with ready made rice flour.
for kai murukku to be crisp, please add butter to the ingredients after mixing them. don't know why, but it makes one helluva difference in taste and texture.
for thattai too, to melt in your mouth, while crunchy to bite off, a little butter to the mixture helps. -

whether we make murukku or thattai or any eatable, first we need to try things. without trying nothing can be learnt. Its all out of practice. share many more, that younger generation can be interested.
